It occurred to me last night as I was making breakfast for supper that whenever I mention making homemade Popeye's biscuits, people always ask for the recipe. I never can remember it exactly, so I thought I would share it here.
For those of you who may not have a Popeye's in your neck of the woods, it is a New Orleans-based fried chicken chain. Their biscuits are very dense, buttery and melt-in-your-mouth. This recipe is so easy. It's definitely low investment, hight return. WARNING: These biscuits have been shown to sabotage diets. Umm, they're also highly fattening.
Here's the recipe:
4 cups Pioneer biscuit mix
8 ounces sour cream
3/4 cup club soda
1 stick of butter
Mix the first three ingredients together. Roll out to 1" thick on a lightly floured surface. Cut with a 3" round cookie cutter, taking care not to twist the cutter as you cut the circles. Melt 1/2 of the butter in the bottom of a 9" x 13" pan. Place biscuits in pan and bake at 400 degrees for 15 minutes or until lightly browned on top. Melt remaining butter and brush over the tops of biscuits. Makes between 12-16 biscuits.
Serve with honey, jam, gravy...Heck! These things are so good you could serve them with dog food and they'd still taste great. Enjoy!
